ROAST HERB LAMB.

1 row Lambs Ribs - 1 garlic clove - 1 sprig Parsley - 2 Bay Leaves - 1 sage Leaf - 1 sprig Rosemary - 1 Pinch Marjoran - 1 pinch thyme - 7 tbsp. Spanish Olive Oil - Salt - Pepper.

Heat 5 table spoons of Olive Oil in a frying pan with 2 bay leaves . Brown ribs. Put ribs in a roasting tin into a preheated oven on a high flame for 15 minutes.
Meanwhile, crush garlic, parsley, sage, rosemary, marjoran, and thyme in a mortar or blender. Take meat out of oven after 15 minutes and baste fatty parts with Olive Oil.
Smear herb paste onto meat with a spatula. Put into oven for another 5 minutes.
