
SPANISH POTATO OMELETTE.
1 cup Spanish Olive Oil - 2Kg. Potatoes - 8
eggs - Salt
Wash and dry potatoes. cut into fine slices.
Fry potatoes and move occasionally. Add a little salt. Once
friend, remove and drain in a sieve. Beat eggs in a bowl and add
salt and potatoes. Stir whit a fork. Put 3 tablespoons of Olive
Oil into a frying pan. When hot, pour in eggs and potatoes. Move
pan to prevent omelette from sticking. When brown turm and cook
on the other side.
