
FRIED FISH.
250 gr. Prawns- 250 gr. Baby Squid - 250 gr. Anchovies in Vinegar - 250 gr. Red Mullet - 2 Large Squid - 100 gr. Flour - 1 litre Spanish Olive Oil - Salt - Soda Water.
Wash and dry squid and cut into rings. Remove
insides and fins from anchovy and red mullet. Wash and dry the
baby squids.
Salt bay squids, red mullet, anchovies and squid rings. Dip in
flour and sieve to remove surplus flour. Peel prawns leaving some
shells near the tail and lighty salt. Make a paste with 3
tablespoons of flour, salt and soda water. Dip prawns into paste
by holding the tail, but keeping tail clean.
Heat Olive Oil in a frying pan till very hot and brown prawns
without them touching each other. Once prawns are fried, fry
others ingredients separately for 4 or 5 minutes and drain or
towelling paper.
Serve inmediately
